This beautiful coffee comes to us from the Koke washing station located in the region of Yirgacheffe.
It is a Grade 1 that was harvested sometime between November-March and then underwent a honey process – this means the harvested cherries have their outer cherry layer removed (or de-pulped), exposing the mucilage underneath. Next they are dried on raised beds and left to ferment in this mucilage which creates complex, syrupy flavors when it is brewed.
